So, I finally got a gopro. I am getting a head harness for it, but I'd like to mount it on my Kayak. I'm thinking an over-the-shoulder mount. But I've also seen these guys who use them but are able to quickly take it off and do underwater video. Anyone know what kind of setup does that?

Price is no objection for something I'd be really happy with.

I rig mine with an extendable painters pole wrapped with a pool noodle so you don't lose it.  Or you can buy one of the many YakAttack camera mounts.  I have both the short panfish mount (PFPMGP) and the taller one (PFM).  Good luck and let the filming begin.

I just use a pvc pipe with a gopro mount attached to the end. It's got a pool noodle wrapped around, and slips into the sail mount on my Hobie. Really, really cheap and simple, and I can remove it and get underwater shots easily (although I'm lazy and don't often do so...).
There's always money in the banana stand.

Yak Attack has some really nice extension poles, I use a Scotty tripod mount and a couple Scotty extensions, they make one that fits right into the flush mounted rod holder behind the seat.

Hmm the yakattack ones look close to what I would like. Not removable but it's adjustable for sure.

Here's what I did:

-Yakattack gear track behind the rear moulded-in rod holder of my Hobie. (From Yakattack)

-Scotty Gearhead track adapter (from Hook1)

-Scotty Gear Head inserted into the Gear Head track adapter.

-Yakattack Panfish (Scotty mount option) plugged into the Gear Head.

The extra Gear Head will let me tilt the Panfish at any angle, locks in securely (versus standard Scotty that can pull apart), and it'll be easy to remove/replace the whole camera pole for underwater shots, etc.

It's all rigged up, just need to go try it out...

I see what you mean. Just gotta twist the knob, pull it out for underwater shots, then put it back in and twist it locked. I like your option best so far! Thanks! I had never seen the Gear Head before so I wouldn't have thought of that.

Yup. It's even easier to put stuff back into the gear head. Just push and it clicks in.

If you're going with the Panfish pole, I'd definitely get the one with the Scotty style base. Lots of mounting options and extensions available that way.
