I tried this, been doing this with doves for years, but never with venison.
Here, I took a section of backstrap and while partially frozen, sliced it into 1/4" wide slices, against the grain.
We used Anaheim peppers in this batch, but jalapenos work fine, hotter. Slice length wise, remove seeds and white webs (the heat part) and stuff the halves/pieces of peppers with cream cheese. Wrap with bacon, secure with tooth picks, and grill em up!
