A neighbor gave me some abalone in exchange for a couple rockfish, but it turned out the abs are pretty old and freezer burned.  I ate some sashimi style after cutting away the burn but it wasn't very tasty to me, (not a huge fan to begin with, although I prefer it raw to cooked generally).

I hate to "waste" it by using it for fertilizer.

Use it to make stock?

Any suggestions?

Do you have a meat grinder?  If so, grind it up to make ceviche, abalone laab, or poke.  You can try to mask the "not so fresh" flavor with a heavier dash of sesame oil and chili pepper if using for poke.

Grind it up and add it to some linguini and clam sauce.

Run it under water to remove the ice crystals then repack it.
Call someone who you may need a favor from in the future that loves abalone but never gets to have any and gift it to them. Blame it on their preparation inexperience if it doesn't taste good.
Chances are they will be so pumped that no matter how it tastes they will already have ingrained in their head it's good so it will be good..to them.
