This is a totally improvised recipe that I tried tonight after talking to my Mom this weekend.  She describe a dish that she ordered at a restaurant in Texas so I decided to copy it, based on what I know how to do, grill fish!   :smt004

I used the remaining ling cod (best) and black cod (good) from my trip last Wednesday out of Trinidad. (Froze them the night they were caught and brought them to LA - no problems.)

I did go out to the $.99 store to buy a jar of Mandarin Orange Marmalade (all natural!)  :smt044

Ingrediets:  Rock Cod fillets, orange marmalade, cayenne pepper, lemon and lime slices.



I thawed the fish, patted it dry, slathered it in orange marmalade and sprinkled a little cayenne pepper on it.





I fired up the grill and when the coals were ready put the fish in my grilling basked and put it right over the coals.



Cooked it about 3 minutes per side, directly over the coals.

Took it off -- squeezed some lemon and lime juice on it, though I don't think it needed it ...



And YUM!!!!!



It was GREAT -- the Ling Cod was the best but the Black Cod was good, too.

i do the same with orange marm....apricot jam, brown sugar....just about any sweet sauce and SRIRACHA!

Yeah!  I like the heat!!  :smt043 -- that would make this rock! -- My wife has trouble with spicey things though - so I tend to go mild when I'm cooking for two.   :smt007

I usually do just one with the Sriracha but no reason you couldn't mix for a new flavor.....

When I was going through a freezer of WSB this year, I tried all kinds of sweet things like that as a marinade/sauce.  I'd usually add some vinegar, and some salt to cut the sweetness.  I didn't try much in the hot dept., but I think I will now.   I even tried maple syrup, but I don't think I'd do it again.  And apricot sounds good.

The Mandarin Orange Marmalade on the last bits of leftovers made an especially tasty fish salad last night -- fish is now all gone!  Need to come back for more   :smt044
