Bitter Sea Urchin

I have never experienced a bad one yet; I have stored some for over 3 days, both processed and whole with no problems......M-

Besides being out of the water for a while, the only other difference that I can think of is white sperm vs. yelow-orange eggs? Male or female? I like them both

It's seasonal. The ones with the white giz oosing out are always sweet

I think I will stick to the yellow ones! The oozy white ones don't sound appealing.

The five on the right are oozing jizz and the five on the left are more of a mustard yellow. The cream filled orange ones were much tastier even if they did look like they were dripping cum.

That has been my experience as well so far.  Grade A uni is brighter orange, and dripping white jizz.  Wish there was a way to tell what the inside is like before harvesting though.

On a side note, I used some of my last uni to make a sauce to top a shrimp gnocchi dish.  Damn that was good!
