A year or so ago I took a class in sausage making.  I have made a few batches of of brats and Italian hots.  I have an attachment for a Kitchen Aid Mixer.  Pain in the butt to use, and would like to step up to somehting a little more heavy duty.  I have been looking at a LEM 575 Watt, or the next size up (I think it is a #8).  Anyone have any expierence with either of these or anyother grinder. also would love to hear what people are using for stuffers and your source for cases.  Molle Stone from time to time has natrual cases, i normally have to wait till they have them.

for casings, stater cultures, etc i use butcherpacker.com, been ordering from them for 8 years or so and have been really happy with them, the lems are nice grinders, how much sausage are you actually going to do a month/week is the way you should consider size, as for stuffers i prefer the vertical manual ones, if you have a designated table for sausage making you can just mount it to the table and makes stuffing very easy, hope this helps, cameron

I have a Cabelas pro series grinder with a 450 watt motor.  I think I paid about $180 for it with coupons.  No complaints... Powers through the meat very nicely.  I've ground 40-50 lb batches of venison with no problem at all. 

Made sausage for the first time this winter.  Using the grinder to stuff sausage casings isn't ideal though... I'll buy a manual stuffer next time around as I think it will be easier than forcing ground meat through the stuffing tube on the grinder. 

I buy casings from the butcher at Whole Foods... Easy.

With what I have currently I can only do 3-5 pounds at a time.  Would that I had a better operation I would step up in size. I don't plan on doing hundreds of pounds of deer meat but 30-50 pounds annually would be ball park. I am thinking LEM only because I have about $150 in gift cards for BPS.  And I like the idea of having somehthng I could use a foot pedal with.  As it seems I am constantly off again on again just making more of  a mess than possible.  Alos if anyone is thinking of doing this.  While the little attachment for a stand mixer works, the hopper attachment is a waste of money IMHO.  I used it once and have never tried again.

Correction, the grinder I was looking at is a #5 not an #8, that would be a little too big for my needs.
