I was looking for a different way to prepare some fillets tonight.  I almost always cook fish on the barbecue and have become a major fan of the "sex sauce" recipe I picked up here.  I had some Albacore fillets in the freezer and decided to poach them in "Court Boullion" , which is a poaching liquid made of water, sea salt, white wine, lemon and herbs.  I started with carrots, onions and celery which I boiled and simmered with water, white wine, a bay leaf, sea salt, lemon slices and fresh ground pepper.  After boiling and simmering this mixture for 30 minutes, I strained it and poached the fillets at 160 to 180 degrees, being careful not to let the liquid boil for about 6 minutes.  I removed the fillets and coated them with a sauce of sour cream, Dijon mustard, lemon juice and freshly chopped dill.  The result was amazing!  I'm not sure this is as healthy as grilling but it was a great change of pace and a great way to prepare the catch. Pretty damn tasty and easy to make!
