Here's my version of Ginger Crack'd Crab, I hope you enjoy it:

- 1 Dungeness Crab
     o Cleaned & cracked; cut the body section in quarters
     o Save the liquid from inside the crab; strained into cup
     o crab butter, if desired)
   
- 6 cloves of fresh garlic
     o smashed and slivered
- Whole Ginger
     o peeled and sliced (1/4 cup)
- Green Onions
     o Washed & cut into 2” lengths
- Oyster Sauce (1/4 cup)
- White Pepper (1/8 teaspoon)
- Cornstarch (3 teaspoons)
- Sesame Seed Oil (1 teaspoon)
- Oil (3 tablespoons)
- Water (1/2 cup)


1.) Mix the Cornstarch, water and a teaspoon of Oyster Sauce in a cup and set aside.

2.) In a heated wok (or pan) of oil, cook the garlic until golden brown.

3.) Add the ginger, cook until the ginger start to become limp and then add the strained liquid and crab butter from inside the crab (you can substitute ½ cup of chicken broth if desired) and simmer for a few minutes.

4.) Add the Oyster Sauce, white pepper, sesame seed oil and stir until mixed; (taste to see if you need to add more seasoning)

5.) Add the crab, gentle stir (so you don’t break the crab pieces) and cover.

6.) Stir occasionally and re-cover for 8 -10 minutes; do not over cook the crab!

7.) Once all the crab pieces are warmed, slowly add the ‘Cornstarch mix’ into the wok to thicken up the broth. Add a little at a time, then mix to see if the broth thickens; if not, add alittle more and repeat until in is thick enough to lightly cover the crab pieces.

8.) Add the green onions. stir occasionally and re-cover for 2 -3 minutes,

9.) Transfer the entire contents into a room temperate service dish (to stop the cooking process) and you are ready to serve!

• Servings: 2 persons
• Calories: off the scale!
