I usually cook up rockfish in a spicy soup, but tried some with the ling meat and it seemed a bit off.  I figure there's got to be better ways to cook up cabezon or ling meat.  I was thinking fish & chips, but I've done that as well.  Looking to try new ways of cooking up the fish.

Any of you guys have any good recipe recommendations for cooking up the cabezon or ling?

I Like to panko fry the ling or cabby. I first dredge them in Louisiana brand lemon flavored meal, then egg wash and panko. The Louisiana dredge keeps the panko on better and adds a great pepper and lemon flavor to the dish. I like to also make fish chowder out of the cabby sense it is so firm using the head and rib sections to make a fish broth then substitute clams in any chowder recipe for cabby. Lings I like to steak out or fillet skin on with olive oil and italian herbs grill skin side down first etc etc.

Cab is excellent steamed whole, chinese-style.  Drizzled with ginger-infused oil...   :love10:

Same with ling, but it's better steaked into pieces that can fit on the wok.

Have you heard about   White Sea Bass Sex Sauce?   i have used it on Ling and it was delicious.

Its really good in ceviche, but for cooking, I like to bake it in a glass dish. Butter oil garlic, ginger on the micro plane, then a little soy and rice vinegar.  Pull it out when it feels a bit underdone, and it will be fantastic! :smt003

Somebody posted a Cabby Curry recipe at one point that sounded good.  I'd search for that.

I like baking it as well, prepare it just like you would for frying with panko/breadcrumbs. I also have gotten fancy with it & added say crushed pecans or crushed macadamia nuts to the crumbs. I oil the glass dish. Nice& simple and the leftovers are made for tacos.

I have been dipping pieces in egg then rolling in potato flakes and gently frying in olive oil. The potato flakes brown nicely and add a great flavor. I serve with capers.

Last night I made a base of

1 cup dry white wine
1/2 oniion
2 cloves garlic
some fresh basil
1/2 cup chopped olives
2 medium chopped tomatoes
1 bell peper
Thyme to taste.

saute the onion, bell pepper, olives
a little later add the diced tomatoes
add the wine and , fresh basil and garlic
spice to taste with salt and peper
simmer for a few minutes.
add fish  and cover
simmer until fish is done.

The olives really make this work with rock fish.

Eric, boil 10 cups of water with a lot of ginger and onions, after 15 minutes add the ling head and simmer for another 5 minutes and add Bokchoy, green onions, salt and pepper to taste.

Good for hungover too.  :smt044
