Man, Harvesting a mess of Albacore is a huge responsibility  :smt003

good problem to have,,, If it was not for a extra refrige around, don't know how this works....

I found lots of conflicting opinions about smoking Albacore...

"Only brine 1/2 as long as usual as Tuna will soak up the brine more than salmon, "don't smoke too long ..."

kinda confusing, but found a recipe that the guy seemed to be confident about so went for it...

Kosher salt. brown sugar...  24 hours

quick, "light" rinse cold water,  then Apple Juice 24 hours...

Dry,  went for 24 hours again

and smoked for around 3 to 4 hours.... Alder...

Yum!!!

I still have another round to go and have lots of O fish... This pic is only 1 of 4 pans... plus primo cuts still in the freezer...

Gotta say thanks to Pole Pole for getting me out there...

I've become a hero to the extended family, neighborhood, strangers... and still have tons of fish

 Pole Pole carved out one of the collars ... well done,  I tried to do one, what a hack!  lots to learn about this fish...

  the next round will be more uniform in the pieces,  going to make things a bit easier...
