Salmon burgers from the carcass! Check out hank shows write up,on it

I do salmon burgers too. I always used to wonder what to do with scraps and those thin tail sections. So here's my salmon burgers(I don't know specific amounts)...

Skin the salmon.
Put salmon in a food processor and pulse it until it looks like ground beef or smaller.
Transfer to a big bowl
Add one egg, mixed
Panko breadcrumbs
Salt
Pepper

Add some or all of the following

Chopped green onions
Garlic
Flat Leaf Parsley
Oregano
Grated Parmasian cheese

Form patties on a baking sheet
Put in fridge for 30 minutes to let them set.
Heat oil in a pan on medium-low. I use a cast iron pan with a lid
Get out some sliced cheese, I like Swiss for this.

Prepare your bun...
Put mayo or tarter sauce on the top and bottom buns.
Put either red leaf lettuce or cole slaw on the bottom bun. If I use cole slaqw then I put mayo on the buns
Add a slice of tomato
Top tomato with salt and pepper.

Cook the burger...
Put the burger in the pan. first side for 4-5 minutes
flip
add cheese
cook for another 3-4 minutes
remove from pan and place on tomato
EAT.

What goes in it really depends on what I have in the house.

Mmmm... That burger sounds tasty. I've done salmon patties/cakes before just by scraping the carcass with a spoon. Added an egg, a little panko, some seasonings, then fried up in a pan. Tasty...
