The first significant kayak fishing accessory I brought to market back in the mid-`90 was the locking paddle clips.  Fishing a Scupper with surf launch conditions, (I don't know why) I stored my rods in the clips through the surf and my reels in a drybag then set-up once out (years later, I started storing rods inside the kayak but that still sanded a few reels until I figured it out).
Mounted on either side, the clips keep your paddle close at hand and out of the way.  Dropping the paddle in and out of the clips is sightless.  It also creates a rail at boatside that makes it easier to stabilize the kayak for re-entry in open water.  Kayak Divers LOVE these clips since it increases control of the kayak in the water at boatside.  The clips fit most boats and the bases can be trimmed to fit just about any kayak except old Cobra models with the vertical sides.  A specialty accessory, I don't mean to suggest everyone needs them.  I'm guessing nationwide, there are about a thousand fishing kayaks using paddle clips and anglers who use them, love them.  I sell locking paddle clips for $25 a pair, including tax and shipping.  NCKA price, $20 bucks.

Pole spears for sure, the guns probably depending on the model and type of kayak but they are strong enough to hold them.

Do you have to thumb them open or do they open just by pressing the shaft against it?

You need to touch the swing (hinged) arm to open it.  It locks by design well enough to carry your boat with most installations but that's not recommended.  The clip open/closes with a spring so it's not locked tight. I add a short paddle leash as extra security when I'm fishing in really bad seas/around other kayaks/busy for a long time on the deck or back it up with the existing paddle retainer cords on many models.  Never too safe.
