I did a batch of herring in the SalmonU brine and I was going to bag them up but the SalmonU guy says he keeps herring in the brine in the fridge  Anybody freezing or just keeping them in bags?

I didn't interpret the article as saying to keep in the brine.  I never do.  In fact, I think you can overbrine the bait and it will get too tough, if that's possible.

Well, there you have it from the "Pros".  No harm in storing in the brine.  I never have, but what do I know?  I'll try storing it in the brine next time and let you know any difference I see.

Do you brine them in the refrigerator or at room temperature.  I've got mine mixed up and currently in the frig.

I've brined both in and out of the fridge.  Somehow it just seems right to put it in the fridge, doesn't it?

What have we started here?  Pretty soon there is going to be a mad rush to the store for Mrs. Stuarts Bluing, salt, and powdered milk.  Good luck to you guys.  I hope the brining works to expectations.

OK now I'm curious,
 Blueing and powdered milk?
Could someone show me a link or give me an idea of what the mix is?
We use herring and smelt for lings and many rockfish. I have always bought them frozen and throw away what isn't used that day as they break down and get mushy.
Would this method be ok for my purpose?

How long are you supposed to keep the herring in the brine?  Overnight?  Couple hours?

Though no salmon gave its approval by dining upon one, the brined anchovies that I used today were bright and held up well to hours of trolling.
