I posted this recipe up on NCUH but thought some here might like it as well. I found this was a great way to eat leftover ANYTHING! Just substitute the abalone with whatever is in your fridge: rockfish, halibut, crab...


I was rummaging through the fridge looking for something to eat for lunch and noted the bag of left-over fried abalone from the other night. Trouble was, there wasn't enough for an entire meal, so I decided to make abalone porridge Japanese style (zosui).

First I made some fish stock broth using a teabag specifically for that purpose. I think we got these in Japantown in SF, and I'm not sure how prevalent it is in other Asian groceries, but if you can find it, I highly recommend it for adding complexity and "umami" to any kind of stews or soups where you would use water or stock. Try making miso soup with it and you will never go back! Anyway, I digress...

Ingredients:
  • about 2 cups of cooked rice
  • stock
  • diced abalone
  • Bok Choy or other veggies of your choice (I found some broccoli that needed to be used along with carrots)
  • chopped scallions
  • 1 or 2 eggs (depending on how you like it)
  • Salt and pepper to taste
  • soy sauce (light)
  • sesame oil

1. Make the broth and put the chopped veggies in. Boil until they begin to soften and then add rice.

2. Keep boiling until the rice just starts to congeal, add abalone and beaten egg, stirring it in well. cover and reduce heat to slow simmer.

3. After a couple of minutes, the egg should have set, and the porridge should be thick. Stir in a handful of diced scallions.

4. Add a dash of soy sauce, a splash of sesame oil, and salt and pepper to taste. (Alternatively, drizzle a little of the sesame oil on tip prior to eating "Korean style".)

Edit - thanks to HamachiJohn for the sesame oil tip. I tried it last night and it really was good. I've incorporated it into the recipe.

I am going to attempt to purchase some, hopefully I get the correct thing!
