I love fish tacos, but I also have been trying to lower my cholesterol. With a bit of experimentation and stealing from other recipes I've found a way to bake the fish that tastes as good as fried, without the oil.

Take 2lbs of rockfish and cut them into 4"x1.5" strips.
Dry thoroughly.

Mix one cup of flour with 2 tbs of chili powder. Place the mixture in a cereal bowl.
Put two cups of panko on a plate.
Whisk one egg with 1/4 cup milk in a bowl.

Take an oven safe cookie cooling grate and put it on a cookie sheet. Lightly spray the grate with Pam.

Now, one at a time, dip the fish in the egg/milk mixture, shake off excess, dip in the flour/chili powder to coat evenly, dip it back in the egg/milk, then into the panko for a good coat.
Place the strips on the cookie grate and broil for 3 minutes. The fish will be browned and crunchy!

Now you can take a couple corn tortillas, add the fish, some cilantro, fresh chopped jalapeno, chopped onion, and some cabbage. Squeeze a lime wedge over it and dig in!

Great modification Jay. I've been baking the fish for tacos as well, pretty much the same way.

I love the fried fish, but now its more of an occasional indulgence. If I fried it every time I had tacos during the summer I'd sink my yak when I tried to paddle it :fat :smt003
