I was there last year and my 3 year old Verizon LG phone worked just fine.  No tinkering with the SIMM card, I just turned it on and was able to text and call.

Correct me if I'm wrong, but didn't AT&T just purchase T-Mobile.

I'd go AT&T because eventually they'll start phasing out the T-Mobile stuff, although you probably have some time before that happens.
