Did this last night and it was fantastic.

Take a handful of cashews, the more the merrier, and mince them up by hand or with a food processor.
Take a handful of unsweetened coconut flakes and mince.
Take a handful of whole wheat bread crumbs.

Mix the nuts, coconut flakes, and bread crumbs together. If you hate coconut, leave it out and add parmesan. If you love coconut, leave it in and add parmesan.

Take some skinless and preferably boneless fillets or steaks.
Roll in flour. I use coconut flour. If you hate coconut, use some other kind of flour.
Dip in beaten egg.
Roll in nut/coconut/bread crumb mixture. Press in firmly to get the fish well-coated.

Light/shallow fry in coconut oil until lightly browned. Use butter or olive oil if you prefer.

Preheat oven to 400 or so. Place baking sheet with oil inside. Once fished is lightly browned in frying pan, move the fish to the pan with heated oil. Spread the fish out so it has air between each piece. Bake until browned and cooked through. Sometimes I turn it to broil to get the outside coating a little crispier.

Impress your friends with this one.
I started with white seabass and cashews and am now using cabezon and almonds and it still holds up. So tender you can cut it with a - oh damn, that's the ending for all abalone recipes!

Yum. Nuts & coconut, two great tastes that go great together.

I've done this with macadamia and pecans as well. The pecans get a nice roasty flavor from the fry.
