I found a similar product made from PVC from an Australian site. I couldn't find the right parts in any of the local HDs or Lowes so I used an old water bottle.  I then attached an aluminum bar off to the side to Hang the transducer. The wires and battery unit are stored inside, sealed with goop.

I had the chance to test my new fish finder last Tuesday in Monterey and it worked well. I was afraid the transducer arm would be constantly knocked out of  place but it remained solid, and gave what I believe to be accurate readings. Now if I could just learn how to use the fishfinder, I'd be set.

That looks like a really workable setup, the flat bar hanger is a good idea it'll have very little drag compared to anything else I could think of.

I recently switched from a glued in puck (shoot-thru hull) transducer to a transom style that I attached up in the transducer scupper location (directly in the water).  The sensitivity was noticeably better, I could track a 1/2 wt down to 30 ft below the yak and watch it bounce the bottom.

So your setup ought to give good sensitivity too. well better than a shoot thru hull.
