  Lately, I've been thinking about the beef curry a former roommate used to make. His beef curry, was sneeky.  Cooked in a wok, he used curry powder, The meat was a stew meat cut into 1" cubes, Oh and he always had a yellow rice with it (Helped keep the fire down as long as the rice lasted)the rest of the ingredients are unknown to me.   The first bite of the cubed meat, went in with no problems,tender juicy, mild seasoning, OK that wasn't bad, next bite, the seasoning start's to come out.  OK, on to the third bite,  This is where I got hooked and mouth started to think " GET THE BEER READY This might not be a good thing" as it starts to heat up! By now I'm shoveling the 4th bite in,and  I can't stop eating it now, (hooked) My mouth is completly of fire! (Drinking tabasco sauce would have been cooler!) but I can't stop eating it! it was that good. 
   He was from Shrialanka(?) No idea of who, how,when he learned to cook this beef curry, but I want to try my luck at reproducing it.
   Anyone have any recipe's

A friend of mine passed this recipe on to me claiming it was great. DISCLAIMER: I have not as yet tried it myself, but it sounds good and I like the slow cooker concept... John

Beef Curry Recipe – this is the best !

You can’t beat a home made curry. I don’t mean a curry out of a jar but a curry made from the proper spices. Here is a recipe which I think is brilliant and I can recommend that you try it. If you have a slow cooker then great because using a slow cooker really brings out all the flavors and cooking the meat slowly makes it much more tender as well.

The Ingredients are for 4 people:

2 tablespoons of flour
2 tablespoon of curry powder
2 teaspoon of cumin
2 teaspoon turmeric
1 teaspoon ground ginger
1 teaspoon of salt
1 chopped onion
1 garlic clove, crushed
1 tablespoon of oil
700g of stewing beef, cubed
1 sliced red pepper
150ml of beef stock
400g tin of chopped tomatoes
A dash of Tabasco sauce
1 tablespoon of lemon juice
2 cooking apples, cored and roughly chopped
25g of sultanas
25g of cashew nuts

How to make the Beef Curry:

Mix the flour, curry powder, cumin, turmeric, ginger and salt.

In a large frying pan, gently fry the onion and garlic in the oil until softened but not brown.

Roll the beef in the seasoned flour and brown on all sides in the pan. Stir in the remaining flour. Add all the remaining ingredients except the nuts. Transfer everything to the slow cooker, including the beef stock, and cook on the low setting for at least 6 hours.

You will find that the beef is really tender and that the flavors are much more intense because everything has been cooked really slowly. You can serve with boiled rice and mango chutney for a fantastic beef curry meal. If you don’t have a slow cooker you can use a casserole dish and leave it in the oven on a very low setting for about 3 to 4 hours.

Before serving stir in the nuts.

The recipe above is good and preparing your own curry powder is the way to go. Unfortunately, whenever I give my friends authentic curry recipes they say NO WAY!!! So if you want to use prepared curry powder, here is a simpler but not as authentic or tasty recipe. http://www.epicurious.com/recipes/food/views/Fragrant-Beef-Curry-with-Rice-104202 I used to make this recipe when I was a curry hack and it is pretty good.

If you have an Indian market near you, buy your curry powder there and get a new bag every year. It is a lot less expensive and better quality than supermarkets. However, heating and grinding spices is really fun so don't let it put you off.
