tons of recipes for ceviche but i keep it simple

helped a buddy clean one the other night and he sent home with a nice chunk , since its been warm outside some cold fresh ceviche sounded good so i got down to it
if anyones new to this ill break it down:

mince the fish up then squeeze hella lime juice into it with some salt and let it sit for a day, after a day drain out the juice(brine)
chop up ciliantro , onions, tomatoes, fresh jalepinos(i used ceranos), lil pepper/salt and toss it up , sqeeze a fresh lime into the mix...thats it! HA
serve with chips or tostada shells , i also pour a little tapatio over the tostada

Dude that looks sick!!!  I'm smoking the rest of that sturgy up tomorrow...so freaking good...brine is on right now!!!

saved a little to boil in water with brown sugar...guy i met said it was better than lobster.......u didn't tell me that...but it was exactly like u said!!!

U doing shelter with the Dr????  I'm there!!!
