This is an authentic Japanese recipe, straight from my Mother-in-Law's recipe box (well, it was in her head anyway, and she told me how to do it). She lives on the Inland Sea of Japan in Hiroshima prefecture, and makes the best fried oysters in the world. Anyway, this respie is really simple, fast, easy clean-up, and delicious, and it garnered me WAF points up the ying-yang.

All you need to do is gut and gill a smaller sized fish (sanddabs are a fantastic choice, but surf perch, or even fresh water bluegill would be great as well). scale it if need be. Either use a sacue pan big enough to fit the fish, or chunk it so that it fits in a single layer.

In the saucepan, add the following:
1/2 cup water
1/4 cup mirin (sweet cooking sake)
1/4 cup dry sake
4 Tbs soy sauce
4 slices fresh ginger

If the liquid will not just cover the fish, you can double the amounts.

Put in the fish, cover, and bring to a boil. Reduce heat and simmer/boil for 15 minutes, ladling the broth frequently and generously over the fish.

Serve with rice and miso soup.

Really love this recipe. Be sure to thank your mother-in-law for me. Cooked it exactly as you suggested except only for 5 minutes and steamed some baby bok choy the last 2 minutes for a one dish meal.
