Yummy, except that escargot is usually land snails and that these New Zealand mudsnails are about 1/8" long.

Invertebrate diversity tends to decrease where New Zealand mudsnails take over which isn't so good for things like trout.

Ingredients:

2 to 3 lbs snails, 1tbsp ginger, 1 pc garlic crushed, 1 can coconutmilk, onion, salt, freshly ground black pepper, olive oil, & chilli powder.

Directions:

1.saute onion,garlic,and ginger in a pan
2.add snails after the onion gets caramelized
3.let it cooked in 15 minutes
4.add the coconut oil and let it boil fo another 15 minutes
5.add chilli flavor
6.seasson salt and black ground pepper to taste

Note: make sure that you crack the back of the snail before cooking for easy to sip the meat.
