Mooch - none of 'em are mine, but you can check out a thread about eel recipes here:

http://www.pierfishing.com/msgboard/pfmb.mv?forum=&module=view&viewid=268869&mode=all&row=253

Pay close attention to Sleepingisnicer's simple recipe. It sounds pretty good!

Update! Better yet just check out the man himself's (Ken Jones) post at the bottom of the thread.

We made it out to HMB yesterday and I brought a handline rigged with a 1/2 egg weight and a #4 treble.  Hit the tide pools for about 1/2 hour dropping squid heads into any crevice I could find (the tide wasn't that low) and got 3 small eels and a small grass rockfish.  Kept 1 small eel to try it out.  Fried it up panko style last night.  It was all right.  It's a sweeter meat that reminds me somewhat of greenling.

Man those eels are creepy.  After the tide pools, I dropped  him in the cooler, then we went to Moss Beach Distillery for about an hour before going home.  After 2 hours in the cooler, the thing was still very much alive.  And  you can't really grab hold of these things as they are very slimy and leave nothing to be grasped.  This also makes cleaning them a bit difficult.  The little monkey head also weirded me out as it was very much like a little monkey.  These things also have some chompers on them.  I tried thumbing it to get a better grip, but it bit back and it had a pretty strong grip and small teeth.

Eels freak me out big time!  I hope I never see one while diving or I will soil myself.  They do look like alien creatures.
