Here's one I learned when I was in Alaska a few years ago.

Mix up a sauce with whatever combination of the following ingredients tastes good to you:
Base:
Cream Cheese
Mayonaise

Seasonings:
Dill
Black Pepper
Pickle Relish
Chopped Onions
Lemon Juice

Cut halibut into 1" slices and layer in a casserole dish or bowl.  Layer fish with sauce in between.  Top with grated cheddar and bake for 35-40 minutes depending on the thickness of the dish.
