One of my favorite ways to eat rockfish is steamed.  But an easy alternative, is fish wrapped in parchment paper. 

My wife has prepared this dish many times, always great (my girls love it).

Ingredients:
Rockfish or Ling Cod fillets cut into pieces
Yellow onion, sliced thin
Sliced mushrooms (shitake, crimini, or...)
Sliced green onions
Sauce (1 part soy sauce, 1 part rice wine vinegar and some sesame oil)
Crushed black pepper (no salt needed)
Other ingredients that you can add are: sliced ginger, garlic, etc......depending on your mood.

Directions:
Using a convection oven, preheat to 375.
Pre-cut the onions, mushrooms, green onions and fish fillets and make the "sauce" 
Pre-cut the parchment paper into 18" sheets
Ready to assemble....
In each sheet of paper, lay down a bed of onions , followed by the mushrooms, fish, fresh cracked pepper, green onions and a table spoon of "sauce".  Fold and wrap.  Assemble 6 paper wrapped packages.

Place the paper pouches on a RIMMED baking sheet (sometimes it may leak), and bake for ~18-22 minutes, depending on the thickness of your fillets.

The moisture from the mushrooms and fish, marry well with the sauce and have a balanced, slightly tart flavor.  I haven't tried this with foil, but given the acid nature of the rice wine vinegar, I'd reccomend against foil and stick with parchment paper.

there are a million different variations to the above..... Italian, Mediterranean, Mexican, Thai, etc.......just swap out the vegetables, aromatics, and liquids.

I love this dish! We also do the paper cook Italian style with fresh herbs and fresh grated Parmesan cheese. Yum.

My wife taught me how to make a similar version using salmon, chopped negi (green onion) and jalapeno, with a little grated ginger and a sake & shoyu sauce, tented in foil.  It's yummy...I never thought about using rockfish though!  This is definitely on my list.  :smt004

Oh man, this recipie is great!!!  :smt007 Made it for my co-workers yesterday with Halibut, Verm, and Cabbie meat and it turned out AWESOME!!! Used foil and parchment paper to keep the foil taste out, worked great!   Thanks for posting it!  Will be making it a lot more often! :smt044
