Long long ago, I actually filleted fish for a living.  This was the knife to have, the 8" as well.  More flexible than the stainless (white handle knife) and holds an edge better as well.

I've got that same Dexter knife, bought it 20 years ago, it still filet's like new. Just steel it now and then and it slices through bones and skin no problem.

Thanks for the first hand advise in using Dexter Russel fillet knives, I think I'll give em a try.  I see they've been around since 1818, so guess they're a tried and proven product.
