Can someone explain to me the difference (from the Kunz site) between the "standard" U-style hook and the "commercial" V-style "slap gaff" hook?

The "slap gaff" hook was developed based on a request from a few of the guys who prefer that commercial style gaff hook.  For halibut, you bring the fish over the gaff with the hook pointing straight up and lift up to spike the fish and lift into the boat in one motion.  The angles are just a little different with that type of hook versus the standard style.  With the commercial style hook, the gaff is extended outward from the kayak in order for the point to be in a vertical position, whereas with the conventional style, the handle is more or less in a vertical position when gaffing a fish.   Some folks prefer that style, some don't. 

Personally, I use the conventional style hook.  Again, being as sharp as they are, you just bring the fish along side and lift straight up on the handle to spike your fish and bring it aboard in one motion.  I make the hooks with a very deep shank so you have plenty of length to the point to penetrate large fish and control them after being gaffed.
