Here is a recipe that will give you an excuse (like you need one) to go fishing, and fire up the smoker afterwards.  Enjoying seasonal brews while babysitting the smoker is recommended.

8oz smoked trout
1/2 cup sour cream
1/2 cup cream cheese
1 tbs horseradish, prepared
1 tbs minced red onion
1 tbs minced parsley
juice of 1/2 lemon

Puree the cream cheese, sour cream and horseradish in a food processor.  Flake trout and add to processor.  Pulse to make smooth.  Transfer to a bowl and stir in remaining ingredients, refrigerate at least one hour.  Cheers.
