I came up with a great recipe for gas BBQ smoked rockfish.

While not truly "smoked", it has great flavor!!

3 parts good olive oil to 1 part balsamic vinegar.  Mix enough to just cover the rockfish.  sprinkle marinade and fish w/ garlic salt to preference.  Marinade for at least a few hours.

I use wood shavings (preferred woods include olive, oak, alder, etc.)  I even use oak twigs off of our property if I'm out of appropriate shavings.  I lay a handful of these on the heat shields before firing up the barbie, and then put the fish/marinade in a shallow pan, so that there is the most smoke/fish interface.  I fire up the gass grill on high, and cook until  the fish is just done.  The olive oil and smoke give the fish a nice flavor, almost reminiscent of beef, or maybe thats the flavor from the burgers on the grill.  The oil adds a nice depth to the low fat rockfish.

I tried a glass pan, and I cracked it, so I switched to a cast iron pan, as it is used to this sort of treatment.

Give it a try!! Its awesome for tacos or anything :smt001 :smt001 :smt001
