I watched so many YT vids.  I dont get it. 

I can fillet a fish okay.  I come thru and cut the ribs that take them out with the fillet.  then lay it down fat, I eyeball the ribs and I cut under them to peel them out.  I always hit bone!!  like it is running in another direction.  driving me nuts.

I usually pull the chute and just cut them completely out and waste meat.

I think the best way to get better is just by practice. When I was around 13 the old timers I fished with always made me fillet everyone’s fish so I eventually got better. I sucked at first and really massacred a lot of fillets but eventually you learn your technique and get better. I’d also recommend finding a recipe you like where the fish can be in small pieces. Like fish cake or fish dumplings or something like that. The fish needs to be chopped up into small pieces, anyhow. Lingcod ceviche is bomb! Even if you mess up removing rib bones, you can still salvage pieces of meat off of it.

Great video. I've been doing it the wrong way/second way all this time. But I usually gut my fish first so I don't get guts all over the fillets. With rockfish I usually leave rib bones and pin bones in and eat around them. Otherwise I feel I'm wasting too much meat. With Lings I get clean fillets from the tail to ribs, then deal with the bony ribs and back as a separate piece.
