How about that white king?!  I've caught a couple at the Cove.  "Bait eater", a local said when he saw it.

She was good, and it was validating to see her do much the same things I do.  I take a little longer, but I think I get more meat.

I thought this was going to be a video of a young woman I've seen on a halibut boat, filleting as they motor back to port.  She flies through the big flatties!

Also, it looked like those fish could've been bled better - I bleed every fish immediately upon landing them, with full removal of the gills and most of the entrails on the water.

Last, I will only use salt water to rinse the fillets, as fresh water starts to break down the meat more quickly.

Her 10 or 12 inch Cimeter knife looks interesting.  I will need one, if and when I catch a 30 lb fish locally.  :smt002

White kings aren't white because of diet.  It is a genetic variation that cause them not to be able to process carotenes correctly.  I brought a few filets home from Kodiak recently.

She got gut juice, slime and blood all over the fillets and then dunked them in fresh water. She needs to wipe the knife between external cuts and meat cuts and keep a cleaner surface.
