12 guys left on the New Salmon Queen at 2 am out of Emeryville.  Went to the Guide.  Had a lot of 2 to 3 fish trolled fish at a time and then 3 to 4 on bait.  Rootbeer and Zucchini was working early with the overcast.  Later, it was Zucchinis and Mexican Flags.

Got 8 Albies and we had 93 Albies.  Capt Shim wanted to get to 100.  But we were a little short.  It was a little slow at midday. Water was calm (flat) and everyone had a great time.  Long day we got back to the dock at 10:30/11 pm.  Pictured is  a 35 lb on bait and 20 lb. string.

It is $300...will actaully $299   :smt005.  But, they have 2 capts and stay out there a lot longer than most boats.  And, live bait is a Big +. You can get a low of $225 or I heard $350 (not confirm, yet).  But, ask if the boat will have live bait.  If not it is mainly a trolling trip.  Load up on the swimbaits and irons on those boats.  Don't forget the Big Ice with plenty of Ice.

Gave most of it away.  I should learn how to can.  But, being lazy and I like to see people get some fresh fish.  I did take the bellies and some fillets to Los Gatos Meats to get smoked.

Now, we need the Salmon to show up.  I like it baked, bbq or smoked...however, my son only likes it smoked...go firgure?

Way to hurt them fishies Ken ! Your post is yet more proof that Capt. Shim's reputation as a fish-killah is well deserved. And I've only heard of the guy through word of mouth.

As for canning, here are a couple thoughts:

I have a few contacts, that eat a lot of fish. When it comes to smoked fish, they'll vac-pack and freeze, and then thaw and smoke the fish on an as desired basis. These folks do can fish as well, but it's not their first option.

Remember that by law, any raw fish served in a restaurant must be frozen for X amount of time, at X temperature (48 hours and 0* F ??). Frozen sashimi grade Albacore sells for $10.50 a pound. I've frozen some of my alby and will be trying it as sashimi. Worst case scenario is that it gets barbecued.

Great pic Ken and thanks for the intel on your party boat adventure. That's a long, long, long day!

Scott, try it hawaiian poki style before you go straight to bbq. We do it with cubed fish, sesame oil, soy sauce, scallions, nori rice seasoning (salt, sugar, sesame seeds and nori), thin sliced cucumber, and red pepper flakes. (skip the flakes for the kids portion). mix up in a bowl, serve with short/medium grain rice.

I smoked some myself, the bellies came out great. the loin was drier, but what can I say I like it anyway. I took some to get smoked professionally, we'll see how that compares.
