I was just about to put together a restocking order of shrimp flies from Outdoor Pro Shop, but figured I'd check in here.  Do any of ya tie shrimp flies?  I typically go for 5/0 or 3/0 Farallon Feather or the Pacific Catch brand with the fuzzy heads.  I prefer single pieces, not rigs as I normally use a dropper loop above my swimbait.

I used to tie them and was getting creative with feathers and buck tails, but later learned RF would just hit anything that moves (even your sinker). So now if I were to use a teaser, I’d just tie leftover bass lure trailers

I've been considering using tube like the commercial guys do.  I have a bunch of tube leftover from striper fishing back east, but it's probably dry rotted after over 20 years of me living out here.  You're right, though... color and style don't matter much.  A lot of fishing lures are more to attract the fisherman than the fish.

My go to is a dropper loop with whatever cheap soft plastic is in the bargain bin at walmart. You can usually find the little pouches of 15-20ea crawdads or worms or whatever for $.99. Add your favorite scented gel to them and it works great.

I hear ya on the fly alternatives and I often use similar.  People buy me mystery tackle boxes over the holidays that are full of freshwater softbaits that I'd never use for the intended purposes.  Those get used for rockfish.

That said, flies are dual purpose for me.  I not only use them to target rockfish on a dropper loop, but I also use them as teasers in front of striper plugs when surfcasting.  For now, I wound up buying from one of the east coast guys again, but I'll keep an eye out for more local craftsmen for next time.
