Here in northern California I believe the best muscle size for harvestingare about as big as my pointer finger and my middle finger not too small to have a good flavor and not too big so as their tuff.

I usually harvest mussels that are longer than my pinky and shorter than my pointer finger. I have pretty bug hands though. Anything smaller isn't worth the work. Anything larger is tougher and has an undesirable flavor.
