When you’re filleting you can also use a spoon to scrape off the leftover meat. Can use it for salmon burgers or salmon cakes, or tartar or spicy salmon rolls if you freeze it (per the fda). I got about about a bowl per fish (20 and 28lbs) despite my attempt at a careful filet job. Takes some of the pressure off though.

I lived in Massachusetts for a year. One day, towards evening, my wife and I were standing on a boat dock in a county park. Some angry guy yelled at us, “The dock is closed!” That seemed weird, as it looked open, but we got off the dock and continued walking around the park. The angry guy got angrier—like red faced, veins popping out of his neck angry—and started screaming “The dock is closed!!!”, over and over and over again, while wildly gesticulating. After a few minutes of this, we finally realized he was saying, “The park is closed”, but his version of “park” would have been spelled something like “paaaaaak”, which sounds way more like “dock” than “park”...
