This one works best with rockfish, halibut, lingcod... Enjoy! (note that I don't use exact measurements. My family is from the Caribbean, I measure with my heart  :smt002)

White, flaky fish fillet
White flour
Tortilla chip crumbs
Lime/lemon
2-3 eggs, large
Old Bay or your favorite seasoning

1. Cut fish fillet into 2-3 in strips
2. Season fish and squeeze half of lemon/lime over fillet, set aside
3. Generously season flour and tortilla chip crumbs
4. Roll each piece of fish in flour, shaking off excess
5. Dip each piece of fish in beaten egg
6. Roll each piece of fish in tortilla chip crumbs, place on parchment paper lined baking sheet
7. bake at 425 F for 13-17 mins, depending on thickness of fillet. Crust should be golden brown when done

Enjoy with your favorite sauce or dip!

The chips get crushed and used after the egg wash.

This recipe sounds tasty and easy! Looking forward to trying it! Tortilla chips vary quite a lot from cheap light and airy to dense and super crunchy... do you have a brand you'd recommend?

I like the Casa Sanchez thick and crispy ones. When crushing them up, I prefer that the crumbs aren't uniform size - seems to make for an extra crunchy texture. You could experiment and go with your favorite brand  :smt001

    Tried it - Good!  Forgot the Old Bay seasoning, so I used some taco meat seasoning in the flour.
    I thought it might need some sauce, so threw together some yogurt, mayo, fresh cilantro, lime and a little juice from pickled jalapenas  for some bite. Some queso in the sauce would have helped. But it was just as good without sauce as with it. 
    I cooked it the air fryer (small convected oven) and the halibut stayed moist inside and crispy outside with a distinct lime taste.  Thanks for the idea.

TLW eats low carb and has a recipe for low carb tempura batter and I got some high carb fisholicius tempura batter, when we get back from
vacation/ “morelikework for me ” we’re going to give this a try with pork rinds instead of chips!  Will advise but I can’t wait!!!  :fishing1

Excellent idea.  I have done oven "fried" chicken in almost the same way, just using potato chips instead and placing on a rack so things can drip.  I will have to try this with fish- thanks for the tip!
