Sounds like fun.  I bought my 05 Tacoma Double Cab Longbed 4x4 recently and slowly been building it for off-road and overland trips.  This was also in hopes as my son (now 1-year old) and I would start doing long road trips (on and off road) together in the coming years.

You should easily be able to find an older but capable Tacoma 4x4, 4runner, Subaru, or similar for less than $7000.

I'd recommend a 96-02 4runner or 03-08 Forester.

Ha! love the concept of the gambler 500 for sure.

Fred and Dave from "Dirt Everyday" have an episode on youtube where they drive a jacked up '70s 4x4 van in the Gambler. Gives a good idea of what the runs are like.
