So I'm pretty stuck on what works best for the transducer on my yak. Ive seen multiple ideas but not sure what to go with first. Any recommendations will be appreciated.

Try youtube, tons of videos how to install a transducer on a yak. U can use scotty arm, clay, magnet, pvc, etc.
