Caught a Mt Lassen trout that was a little over 5lbs at shadow cliffs on Saturday . Found that it was loaded to the gills with eggs..
Was looking to gift them to someone or decide if I could cure them for bait.
Just so happened the Notorious Alien was texting me this morning. So it looks like I will be saving them for him.
Just curious how someone would cook them or would use for bait ?  I have seen people eating  flying fish eggs raw. These eggs looked to be just slightly bigger.
Honestly they look very good. Just have not tried them before.
Some suggestions for next time would be great.

Cure the roe and use for steelhead bait. That's what I would do.

I'm not sure how much different my lassen is from steelhead but I have had them in my scrambled eggs. They were great.

That looks awesome. I wonder how it would work with halibut eggs.
I don't like stuff that sucks.

I'm a roe hoe.   :smt004

My favorite way to make trout/salmon roe is "ikura no shoyu zuke", basically marinating for a few days in equal parts soy sauce and sake, with a splash of mirin.  If you've never had ikura this way, try it!

As for halibut roe, most of the time, the roe is not loose enough to separate effectively.  Just split the skein, coat with flour, and pan fry in butter.

Another way I've been experimenting with roe that is not loose is to make a Bottarga, basically salted and dried.  It's kind of like caviar, but it whole skeins instead of loose eggs.  Shave/grate it over pasta or a salad, for an extra touch of sea salty goodness.

You have dibs on the next batch Allen.  :smt001

Thanks for the input on preparing them.

Maybe I can tell Alien my Mom took them and gift these to you.  :smt002

He owes you for the ride home on New Years anyways. Well...except for that pic  :smt005
