Spaghetti with Clams, Bacon, Garlic in a creamy Uni sauce

Harvested Gaper Clams from Tomales and Uni from Mendo.

Baja Ninja approved  :smt023

1 cup Uni purée
1 cup low fat milk
3/4 cup grated Parmesan cheese
Martillo mix see recipe below
Freshly ground black pepper
1 lb chopped clam meat
1/3 lb diced thick smoked bacon
2 tbspns chopped garlic
1/4 cup diced yellow onion
1lb spaghetti

Martillo Mix

3 parts Lowry’s seasoning
2 parts Garlic powder
2 parts Onion powder
½ part Paprika
½ part Cayenne powder
½ part Kosher salt

Combine the uni, milk and Parmesan cheese. Mix and set aside.

In a large frying pan over medium heat cook the bacon until almost crispy.
Add the onion and after a couple of minutes add the garlic.
Let the garlic sauté for a couple of minutes then add the clams and season with
Martillo mix. Continue cooking mixture for about three minutes being careful not to over cook the clams.

Boil the pasta until its al dente, drain and pour over the clam mixture. Slowly pour the uni cream mixture over the pasta and clams and gently fold over mixing all ingredients together.

Add freshly ground black pepper and garnish with freshly chopped Italian parsley.

Buen Provecho!

Looks like I'll have to smoke some more bacon and some clams to give this a try!  Just reading the list of ingredients and the prep has my imagination smelling wonderful things.  But where can I find uni in Placerville?
