Like eelkram said, time on the water is what will get you comfortable!

I'd also suggest joining one of the local paddle clubs and just paddle without the fishing at first. There are quite a few in your area, like Sac Paddle Pushers and the Sac Yackers. I am in the Lodi Paddle Club, so not too far - I'm happy to meet you on Lodi Lake and show you some paddle basics :-).
I am also the 4-H Leader for kayaking in San Joaquin County....is your son in  4-H?

Thanks everyone for the suggestions. We have baseball today, then we are all going to head out and scout out some lakes up the hill and let the boy fish. Tomorrow we will take the kayak out for some practice.

I had an unexpected free morning on Sunday so I hit Folsom for a couple hours. I got skunked but a guy fly fishing on a paddle board had caught a few so I was hopeful. I spent most of my time along the steep rocky area across from the launch using gulp minnows on a dart head, Carolina rigged worms and lipless crank baits with no love. Fish finder wasn't working for some reason so that didn't help the cause.
