Im good at filleting a fish, but Ive heard that your supposed to "butterfly" fish for smoking. How the hell do you do that?!
And is this the way to do it? These trout are smallish, the biggest one is about 14". And, can I use Chuckies recipe for Indian candy?

I did a quick search and these same instructions seem to appear on just about every Canadian trout fishing guide's website...

ben, tell me if that works, I too am fair to middlin with the filet knife but when I saw those butterflyed trout at the fish market,
I was wondering how they do that.

hey guitarzan,

butterflying trout is really easy after the first or second attempt. Brian's post on how to do butterfly filet is just how i do it. Some time i leave the head on just for show when I do a trout almondean dish.
