Okay, I know this has been posted before, but I made these last night.
Slice the ab either down (this creates longer steaks), or across (this creates big circular steaks). I sliced it down. Then pound it.
Put a slice or two of jalapeno across the steak and sprinkle the entire thing with cheese. I used smoked gouda.

Roll it up length-wise (imagine how you would roll up a sleeping bag or a Therma-rest pad).

Pin it together with toothpicks, then roll in coconut flour, dip in egg, and roll in panko bread crumbs. Place on a wooden cutting board and put in the freezer for 30 minutes.

Fry until golden brown in HOT oil.

These were awesome. Be sure to serve to a crowd. Otherwise, you'll eat all of them and hate yourself for it.

Why reinvent the wheel?.....they look awesome and yes you will want to eat them all and hate yourself for it  :fat. I have some other ideas that I want to try out too.
