Does anyone use the cheapo brinkman smoker or are you guys all electric. Is there a tried and true technique out there. I end up throwing away half of what I'm trying to smoke.

I have a Webber kettle smoker that I got for free off of the side of the road...really.  I was struggling with charcoal as well, and Leahs dad showed me the way.  We went to Kmart and bought an single electric stove element thingy (kind of a hot plate dealie) for about $10 and then put the chips in a round metal cake pan.  Works awesome and ez to manage.

I use a cheapo electric smoker from Home Depot as well (char broil brand).

Works just fine once you get the hang of it.  I added hooks for a third rack so I can do quite a bit of meat at one time.

I do the sturgeon jerky on it and set on medium during a 50 to 60 degree day the smoker stays at below 180 degrees or so, nice and slow.

electric is super simple. the luhr-jensen big chief, little chief or mini-chief are well regarded by functional types if not gourmets.

I use a mini-chief, it will smoke a few lbs pretty easily.
