Those guys in new Zealand come with some interesting ideas.  I think something like to trident 13's or two Predators would be a nice spin off that.  Hell for that matter two Sports Authority or West Marine boats, and you can get the motor there as well.

The guys at Native mentioned they actually did this years ago, sold a kit to convert two kayaks into a catamaran...didn't sell at all so they gave up on it.

Want a motor? Buy a boat. Cobbling yaks together as an outboard platform creates a lesser vessel than yak or PB.
