Headed out yesterday morning with JTFishing to find new diving grounds. Had been playing with the Navionics ap on my Iphone and decided to check out a few spots and see which one looked the most promising.

On the ride up North we ran into KenJan and Rudy. After a brief chat we went our separate ways......we all know how that turned out  :smt009

After checking a few spots out we decided to do a shore dive at Doobie Point  :smt033

Conditions were stellar with a shit load of uni and abs everwhere. I quickly loaded up on a dozen and a half softball sized uni and then started hunting for that elusive trophy (Gio, congrats brother  :smt001)

Must have seen at least 100ct. 8.9 inch abs.......but couldn't even find one 9er.

My fortune had turned when I came across a ling I had seen about 40 dives previous. Unfortunately, at that time I was only toting an ab gauge. This time around his luck had run out and he quickly got a double band shaft shot right through his left eye and out his neck.

Fiesty zombie ling...... didn't want to die. Ripped out his gills, brained him good with my knife........was still kicking :smt011.

Soon there after I came across my first 9+ ab of the day. I finished off the dive with a nice black and a few more rockies.

Long day but well worth it........can't wait for dinner  :fat

I don't mind especially since it helps me to write recipes down, post and then bookmark for future use  :smt001

I have several renditions of this but here is how I prepared it tonight.
Getting the sauce consistency is key with the hot pasta water.


Uni Pasta

1 tbsp EVOO
2 Louisiana hot links diced 
2 tbspns chopped garlic
1 cup halfnhalf
1/2 tbsp Martillo mix see recipe below
1/2 packet of Philadelphia cream cheese
1lb spaghetti cooked al dente
1 cup Uni purée
1/2 cup grated Parmesan cheese
Freshly ground black pepper
2-3 cups reserved hot pasta water

Martillo Mix

3 parts Lowry’s seasoning
2 parts Garlic powder
2 parts Onion powder
½ part Paprika
½ part Cayenne powder
½ part Kosher salt

Brown the diced hot links in a tbsp of EVOO.
Sauté the garlic in the pork fat.
Add the half n half over medium heat.
Add Philadelphia cream cheese and the Martillo Mix and stir until cheese is dissolved.
Add the cooked pasta to the pot and then pour uni over the pasta.
Gently fold the pasta in the sauce.
Add the Parmesan cheese and freshly ground black pepper.
Add hot pasta water to form a nice smooth sauce.
Sprinkle more Parmesan over each serving if desired.

The ling cod was generously dusted with Martillo Mix and seared in EVOO.

Awesome dude!  Jealous of those uni. The last 20 or so I've pulled have been almost empty.
