Had a great weekend cooking for some good friends. I cooked this in the smoker, and it was SO hard to cut, it was fall apart tender. You can use any large piece of meat, and substitute the stuffing with any ingredient you want. For wild boar, I add diced granny smith apples and rosemary. Turkey breast I add chicken in a biskit craker crumbs, etc.

Another elk roast that was smoked along side some grilled up New Yorks. I can't say anything about the smoked roast, I was testing it for a friend that will be putting it in his new cook book coming out in a couple months. BUT OMG! It was fabulous, and so easy! The NY were for the kids just in case they did not like the wild game.

One kid had a piece of NY, but between the three roasts, they liked something. Thethird roast was a sirloin tip that was smoked for two hours, then baked. It was too thick and would have taken a week. It was injected with a mix of cider vinegar, lemon juice, worcestershire, salt n pepper. Sounds weird, but was just the ticket. I cant give specifics, again it is going to be in his cook book.
