And important, how are you drying it out?  use a dehydrator?

Basically I like it the same way that I make beef jerky!  Recipe is like a lot of other jerky marinades:

Cut Halibut into 1/2 think long strips

1/2 Soy sauce
1/4 Cup Worcestershire
3-4 Cloves of Garlic
1 Cup of Brown Sugar (or more for sweeter)
Good squirt of Sriracha, or some crushed red peppers

Marinate at least overnight! Then I smoke it in my Lil' Chief for I think about 4+ hours, but basically until its done, and hopefully not overdone.  Place in a plastic bag with a paper towel.  Good for a few days!
