Wouldn't mind having a longer kayak for speed, but how hard is it swinging a rod around when fighting fish on those longer kayaks ?

I can't really answer that but, I kind of thought most people just keep pedaling and let the rudder turn them in circles if that happens. Otherwise I don't see how anyone could fight fish on an Adventure Island.

You don't.  With a solid pole and reel the fish will come to your preferred side of the yak.

On my 16' kayak I use 6.5-7' rods and have no problem getting around the front if I have to.

6ft rod you have to lean way forward but it's doable. 7ft you just lean forward a little.
