I made this recipe on the opener:

It's pretty good and I used 2 jumbo dungies for the 2.5 cups of uncooked rice but you could use 3. I would double the amount of the chili fish sauce and max out the number of Thai chilis. The lime juice is optional as are the shallots. Life is good. Scott

Awesome, My girlfriend is from Pataya and she makes a mean fried rice but you kicked it up a notch with the crab :smt001

Here is a tip on this recipe. If you follow it, you add the crab, then 2 eggs, then the green onions. By the time you green onions are stirred in, the crab has broken into really small pieces, barely visible. It tastes good but you don't get chunks of crab. If you want chunks of crab, add it with the green onions at the end, gently stir then turn to low and cover for a minute or 2 until the crab is heated through.

Since fish sauce and white pepper play a big role, use good fish sauce and freshly grind the pepper. Personally I like the 3 crabs brand fish sauce but Red Boat 40 degrees is better but expensive and Tiparos and less expensive.

Hah!  It appears we were all searching for crab recipes to try.  I used this same recipe  with some leftover crab from an attempt at making typhoon shelter crab. 

I made a few minor changes.  I used less white pepper and even that was too much.  I sauteed some green onions and scooped them out before cooking the dish.  The green onions were saved to be sprinkled on top of the finished dish.  It's a tasty dish but lots of work.
